1 Tablespoon of Rice Malt Syrup (you may want more depending on your level of sweetness)
1 1/3 cup of shredded coconut
1/2 cup of unsalted cashews
1/4 cup of coconut cream
2 tablespoons of coconut oil
Method For Filling
1: Place all ingredients into a blender or thermomix and blitz for 20 seconds.
2: Roll the coconut mixture into balls or if you are making the log, roll it into one large ball and place into the freezer on a lined baking tray.
3: After 10 min if you are making the log, take it out of the freezer and roll it out into a log/cigar shape.
4 tablespoons of coconut oil
4 tablespoons of cacao powder
2 tablespoon of Rice Malt Syrup
Method for Chocolate Coating
Mix all ingredients together. If your coconut oil is not of a liquid consistency you will need to heat it up first.
Roll the balls into the chocolate mixture once they have set solid in the freezer.
If you are doing the log, pour over the top of the log and roll the log until it is completely covered.
You may want to do two layers on the balls, so after the first layer, put them back into the freezer to set and try again.
You can also add coconut to the top to make it even prettier!!!
