1 cup of cold water
2 tablespoons of gelatine powder
1/2 cup of Dextrose for a slight sweet taste
1 teaspoon of vanilla essence
1 teaspoon of food colouring
1 - Place 1/2 cup of cold water in a small bowl and add the gelatine powder. This should form a glue like substance once you stir it in.
2 - Using a saucepan over a medium heat, add the rest of your cold water with the 1/2 cup of Dextrose and stir until the water goes clear. Add in your teaspoon of vanilla essence and your food colouring.
3 - Add your bowl of gelatine/water mixture to the saucepan and stir until it boils.
4 - Place in a mixing bowl and let sit for about 10minutes
5 - Mix/beat until it aerates and forms big peaks of marshmallow (takes about 15 min)
6 - Place in a tray *** Line the tray with a sprinkling of dextrose powder to give them that little bit of extra oomph of sweetness when eating OR sprinkle on top once they are finished. I found this made them even better!!
7 - Refrigerate for 1 hr, then cut up to enjoy!!
FRUCTOSE FREE POPCORN CRUNCH
4 cups of popcorn
1/2 cup sliced almonds
1/2 cup crushed macadamia nuts
1/4 cup of shredded coconut
30mls Rice Malt Syrup
1 cup Dextrose
1 teaspoon vanilla
1 - Place Rice malt syrup, Dextrose, butter and vanilla in a large saucepan and stir until dextrose is dissolved.
2 - Drop the heat to low and let it sit there without touching it for 6min (should go golden colour)
3 - Have a pan ready with baking paper lining the bottom
4 - Take off heat and stir in nuts, popcorn and coconut
5 - Place into tray
6 - Let set in the fridge
7 - Break off chunks and enjoy
