As the saying goes, its better late than never, so here it is.
I stumbled across this beauty from a website that I had been following for ages. I was one of those lurkers, always reading but never commenting or trying the recipes. That was until I saw this little bastard and thought I must try it. Coconut Crack literally lives up to it's name because it is ADDICTIVE as hell. So addictive that you may find yourself in a nightclub toilet doing lines of it. Every person who tries this goes back for seconds. I replaced the sweeter with Rice Malt Syrup to make it compliant with this lifestyle. Seriously good sh*t!
This recipe was taken from David Gillespie the guru of all things fructose free. This was a lunch box staple for months and months, well until we had too much of a good thing and couldn't even stomach the look of it. Everyone loves a good chunk of Chocolate Slice and we went hard on it! My husband would request this be made for his days off, unfortunately it never lasted that long... unlucky hubby.
This recipe is so simple that the 7 year old makes it weekly and the 2 year old devours it like her life depends on it. The kids have these in their lunchbox every single day and I'm not embarrassed to say I have them packed in mine as well. Variations to this recipe are
Add 140gm of blanched almonds
Add 200gm of 80% cocoa chocolate
Add 100gm of shredded coconut.
Obviously not all at the same time (well unless a blanched, chocolate shredded coconut butter biscuit floats your boat)
Vanilla Cupcake with Sour Cream Cheese Dressing
If we have to bring a dish with us, we always bring these cupcakes. No one has been able to tell the difference between these and the sugar kind. They seem to go even quicker then their evil brothers do. The 7 year old goes through stages of wanting one of these with a glass of milk before he goes to bed at night. This may seem standard for a kid but the 7 year old barely requests anything sweet, so you know its a winner. I have shared this recipe with friends multiple times because they keep pulling a Fabio on me and saying "I can't believe its not sugar". The icing is bloody good too!
Caramel Nut Popcorn.
This recipe is a favourite of mine but something that I rarely make. This might seem like a contradiction but its because I can not help but eat the whole thing in one sitting. Word to your mother you just can't stop because it's so bloody delicious. I made this for a kids movie night and found myself being sent back to the kitchen to make another batch, as it was inhaled before the movie even started. A goody but a huge willpower tester!
Cashew Blueberry Ice-cream
When I was first given this recipe, I really hesitated to try it.. Cashews making ice-cream... sounds like the work of the devil! However it was a huge hit with the 2 year old, so much so, that we fill our ice cream moulds with it and have it always on hand in the freezer. I've included this in my favourites, simply because it is something you must try!
This was my first ever "sweet treat" that I allowed myself to have on this journey. Over a year later and I'm still eating it. It takes minutes to make and if your not used to that cacao taste, you can swap with coco. I make these balls for friends who are starting off health kicks. I know that whenever I'm craving a quick, sweet treat, I can trust these balls to deliver.
I thought I should add some mains, because as much as I could live on the above, that wouldn't be very responsible of me. (I don't adult very well, I admit it)
Skinny Mixers Butter Chicken
All I can say is WOW. This is my favourite dish to make and I have made it that times, I know the recipe off by heart. The main fructose does come in the form of tomatoes but I always use fresh tomatoes instead of tins and Pasata Sauce instead of tomato paste. I also substitute the honey with Rice Malt Syrup. This is so good to have with Naan Bread, Papadums or just plain rice. When I have friends and family coming over for dinner, this will always be on the menu. It makes me look like an amazing cook and its impossible to burn. I will admit for the sake of the 2 year old not having a meltdown, I leave out the cinnamon sticks, anise stars and pretty much anything that requires you to pick it out. When the vegan hubby is home, we substitute the chicken for chickpeas and the 7 year old asks for the chickpea version now.
Lemon Ricotta Pasta
Our family is addicted to lemons! We put it on everything, so this meal is right up our alley. It is quick, delicious and tastes even better the next day. You definitely need to add a salad or something to really get the most out of the flavours.
Non Fried Rice
This is more of a lunch time winner!! I lived on this recipe for weeks when work was really hectic and I didn't have time to be cooking big dinners. The kids were happy with toasted sandwiches (I could offer them a 5 course meal made by the President's Personal Chef and they will turn up their nose and ask for a ham and cheese toastie). You can bulk it up with as much veggies as you like, which makes it even better in my eyes.
Very Vege Lasagna
With my husband being a vegan (well flexatarian, since he is flexible when he has to be) we have eaten some pretty shocking meals, that I never want to speak of again. This however is something that we rotate fortnightly. It gives everyone a good dose of healthy vegetables but more importantly, it tastes bloody good. It makes a huge amount and there is leftovers for days. I included this in my top meals because it is another recipe that if you weren't told to try, then you probably wouldn't give it the time of day. Its a goody!!
7 year old pick
Apparently this is a good recipe for both adults and kids according to the 7 year old. The 7 year old couldn't decide which version he liked better (I vote Sweet potato). He said to mention that you can add all different toppings but don't add those dead fish things (anchovies), as they will make you vomit and a friend at school told him that if you eat them, your poo smells like cat food... legit fact apparently... on that note... enjoy!
