I am constantly reading and finding new recipes and new things that I wish I would have known when I first started being fructose free. I use a lot of dextrose and Rice Malt Syrup in my cooking and just assumed that everything matched evenly. However last night I found some information that would have been really useful in the last 4 months.
DID YOU KNOW??
*Dextrose is lighter than sugar. A cup of sugar weighs 250gms whereas a cup of dextrose weighs approximately 180gms. So if you are using a recipe that goes by weight instead of cups then multiple the sugar weight by 0.72
126 gms of sugar multiplied by .72 = 90gm of dextrose
*Dextrose soaks up more fluid then sugar, so when using it in a recipe, increase the liquid ingredients by around 15- 20grams.
*Dextrose will cause the batter to cook faster, so it is recommended that you turn the oven down 10 degrees from what the recipe is asking. I seriously wish I would have known this 6 months ago, because the amount of times I have cursed out our oven for burning my baking, has turned me into quite the potty mouth.
Early on in the week, I attempted to make the Raw Choc Chip Cookie Dough Bliss Balls from this blog entry. I ended up using too much butter and it made the balls that little bit too buttery. I would only ad 1 tbsp next time and that would be being generous. The 7 year old loved them and has been eating one every day after school. I put a little dark chocolate drop on top that I got from the health food store. This is the first time the 7 year old has eaten anything with dark chocolate as apparently it tastes like "ants" and to be more specific "black ants" because he eats black ants daily and knows what they taste like. I honestly didn't enjoy these balls at all, but thats balls for you I guess.
I also tried a recipe, which was just me throwing together a shitload of ingredients that I had in the cupboard.
I put in a little too much cacao powder as it was too overpowering. I have posted both recipes:

Tomorrow the kids have been invited to go Trick or Treating with their cousins. This has become a little family tradition that my cousin organised and it is quite harmless and fun. Due to her children having allergies and not being able to eat certain ingredients, she arranges with about 6 houses in her neighbourhood for them to give out lollies/treats that she has pre purchased for them to give the kids. All they have to do is hand out the lollies that she has given them and the kids think they are in lolly heaven. The 7 year old has been counting down since Easter. He loves the idea of getting dressed up and collecting a bag of goodies. I have been trying to find a few lollies that are made of pure glucose without going down the track of giving him sugar free lollies, that will cause explosive poos. I went as far as looking at ordering lollies from overseas, but then I got lazy and forgot all about it until today…. So after spending a couple of hours googling, I went back to my David Gillespies Members area and had a look to see if anyone had ever discussed glucose lollies that I could get in Australia. I came across Groovy Candy Rolls and Love Notes. I found them in my local Woolworths and grabbed a packet of each. The thing with Halloween is, that the thrill comes from filling your lolly bag and going through your goodies, eating doesn't really come into play (well for my kid anyway). The 7 year old has never been a big sweet eater and the last couple of years we have done this, he has eaten maybe 3 lollies out of say 20, so I know that I can turf all the lollies to the neighbours kids when we get home. I also decided that I am going to go and buy some spooky looking toys to fill up the bags for the kids. I have not uttered a single word about us being fructose free at halloween to the 7 year old, nor has the 7 year old bought it up. I'm pretty sure he is hoping that if it isn't mentioned, then it isn't real. That maybe just maybe I might forget and let him be "normal" pfft….. as if we could ever be normal. I personally can't wait for tomorrow night. I love seeing how excited the 7 year old is and this will be the first year the 1 year old will be running right beside him. I mean this literally, as she will not want to miss out on a single thing that is going on. She will of course be the one shoving every single lolly into her mouth and most likely planning an attack on the other kids to get their lolly bags. There will certainly be one demon out that night and she will come in the form of a cute angelic blonde child.
