No seriously I'm not on crack.... well actually I'm on coconut crack apparently, but hey its legal (i think). This scrumptious little dessert/treat tastes so dam good that you feel bad for having it. You feel like this has to be laden with sugar. It tastes so good that you assume its got to be a trick!! I thought I had found the answer to my sweet desserts with the chocolate truffle balls, but trust me people, that is so last week... this is the answer to your sweet hit problem. This is the hard sh*t (apparently).
It tastes like coconut ice to me and I IMPLORE you to try and make your own.
I have been following "Chocolate Covered Katies blog for about 4 years and I can say that in those 4 years I have made umm nothing. It all looks so great and so healthy and seriously her recipes for anyone trying to be healthy are amazing. She knows her stuff but everything seems like a lot of effort and I'm also lazy... why buy the ingredients to make a healthy cookies and cream imitation icecream when I could just go buy the real stuff for half the price and no effort. That was until I started this sugar journey and realised I had no choice but to become a kitchen b*tch. Yep thats my official title for the record. That doesn't mean I'm a good one, but I'm now all domesticated and crap. I no longer have a choice but to make it, as there is no sugar free treat section at the shops.
Anyway back to the Coconut crack bars. I love the name and the great part is you don't have to inject them into your veins in a seedy truckstop toilet. You don't even start hallucinating that baby dragons breathing sugar are crawling all over your skin. These won't get you arrested (unless you steal the ingredients to make them). These are AMMMMMMMMMMMAZZZZZING.
SO GO NOW AND MAKE THEM.. DO IT... NOW...
So what else has been happening in the last 2 days. I got the nervous snack attacks yesterday. You know when your really nervous about something and you just start picking at food in the hopes that the food crushes the thousand butterflies incubating in your guts. I had my Oztag semi final on last night and I spent the whole day leading up to it just snacking. It was like in my head I knew I had to make sure I had eaten so I had energy but I didn't want to eat too much so I pecked away. Then I needed to take my mind off how nervous I was, so maybe I should peck a little more. I didn't even have dinner after the game because I was so excited that we had won and were in the Grandfinal. It was just before midnight when my stomach registered that I had abandoned it and it started protesting. I wasn't going to get up and wake up the whole household making a 3 course meal so I just grabbed an Anzac Biscuit.
So this morning I had a really big breakfast to make up for no dinner and also because I was really really hungry. I'm not going to lie and say breakfast didn't start with a coconut crack ball (Oh I forgot to tell you i rolled them into balls not slices.. because the rice malt syrup made it to sticky for bars).. because my breakfast did start off with a coconut crack ball. I then had two slices of sourdough that was infused with olives and covered them in avocado, grated goats cheese and lemon juice. It hit the spot plus some!!
I then worked it off because I wasn't working today and took the kids to a local community event and I think we walked about 6km in the hot sun checking out all the stands, stalls and what it had to offer.
For lunch today I had a chicken salad made from spinach, olives, fetta, tomato, and whole-egg mayo.
What I'm finding on this journey is that unless I have leftovers, I seem to just stick to what I know, whats easy, healthy and what I enjoy. I'm also finding that the week my husband is home I'm making more of an effort (dammm I'm a good wife) because when its just the kids and I, we just go with what I know they will enjoy and what is the least time consuming. And now with the addition of baby coconut crack bar, things are going to get even harder...
So tonight I have sausages to use up but I'm going to also whip up another recipe from Chocolate Covered Katie, her Greek yoghurt and Mac Cheese because I bought a big mumma greek yoghurt last week and its getting close to having to be binned.
I will let you know how the Mac and Cheese goes and will UPDATE this entry tonight!
Failure for the whole family... The greek yoghurt made the dish very bitter and it was missing that creamy deliciousness. I think I would half the greek yoghurt next time and double the milk... Who am I kidding, there won't be a next time. I hope the dog likes it, cause it should feed her for a week.
