Anyway I decided to jump onboard International Fudge Day and googled sugar free fudge recipes! What do you know, quite a few came up that I could choose from. I found the one with the least ingredients and got to work. I stupidly read the comment section and nearly everyone commented that the rice malt syrup made it too sweet and next time they would go without it. So I didn't add in the rice malt syrup, thinking the crowd knows best. The rice malt syrup was meant to be boiled in the first step, so there was really no going back. I finished the recipe with no dramas and was just about to pour it in the tin and did a taste test. Ummm there was no sweetness at all. This tasted like peanut butter. I thought it was meant to be fudge!! I could have basically scooped out some peanut butter from the jar and let it set and would have got the same taste. So I decided to add some sweetner. I knew that today I was feeling particuarly lazy and didnt want to boil the rice malt syrup so I thought I would add dextrose powder. For a second I hesitated because in my heart of hearts I knew that if you add dextrose to a hot liquid it creates a runny gunky mess.. (Hence why it often takes me 3 attempts to make the icing for my slices). However the lazy part of me thought they knew best and that the temp of the peanut butter and oil was luke warm at best.... WRONG!!!!! So who wants a gluggy gunky crystalising mess of fudge. I didn't. I did secretly enjoy when the 6 year old came home from school and screeched in panicked terror that the baby had done a giant poo in the bin.. This is not a lie or an exaggeration to make this story better. Once you see the pics you wont blame him for thinking this. At this stage, I was pretty sure the president of Fudge Land would be pissed at my efforts. How dare I even contemplate putting that mess in the fridge to set in honor of his special day. For the record I did put it in the fridge for 10min. Then I checked on it and noticed it was floating in a cm of oil... So I binned it.
I felt really downtrodden and decided that I was not worthy to celebrate fudge day. I went into the bathroom to dry my tears and thats when I thought "NO FUDGE IT!!" I AINT NO MUTHER FUDGIN QUITTER, I WILL CONQUER THAT FUDGING FUDGE IF ITS THE LAST THING I DO" And I also said it in a Samuel L Jackson voice...
Round 2 and a big middle finger to the commenters who said not to add the rice malt syrup. Just as I was about to pour it into the mould, I had a taste!! Success. Not too sweet but not like pure peanut butter. Heres hoping it sets ha!!
I also have to boast about an awesome breaky I made the other day. French Toast! Except I used Olive Infused Sour Dough Bread from Woolies and the saltiness of the olives mixed with the sweetness of the cream and ricemalt syrup drizzle was a winning combination. This breakfast literally took less than 5 min to prepare and serve and was a winner with everyone. Except for the part when the 6 year old who was up to his second piece, wanted to know what those rotten black things were in his bread, which all of a sudden made it inedible. Even though 5min before it was the best breakfast EVER!!
I also tried my own little recipe yesterday to make some protein balls (minus the protein powder and dried fruit) for the kids and the biggest kid (myself). I did 2 batches. 1 I used almonds and the other I used cashews. I smashed them in the thermie to turn them into a floury substance. This is apparently called milling. I learnt this yesterday because I had to google it when I found a recipe that told me to mill my almonds. I like to call it smashing (so much classier really). I then added coconut, cacao powder and rice malt syrup to bind them. The 1 year old LOVED them but the 6 year old has a thing going with cacao powder at the moment. He hates the taste of it and tells me to stop using the "pretend chocolate" and to maybe try some milo or something...I am going to make another lot today without the cacao powder just for him, no doubt he will have something against coconut for being too white or something. I also added vanilla essence but it gave it a funky aftertaste. Wont be adding that again.
On the weekend, I also made some traditional rice pudding for the 1 year old, except the one year old only got one serving out of it, because I ate the rest. This was soooooo good, especially because it was raining and cold. I just substituted the sugar content for dextrose but only half the recommended amount. If I was to make it again (and I will be) I might add a tiny bit more dextrose, as it only had the slightest sweetness to it. This was for the 1 year olds benefit, as I was trying to find something to substitute yoghurt in her diet. I have tried custard but she wasn't the biggest fan, greek yoghurt was too sour and her kids yoghurt had 6 teaspoons of sugar in it per serving. The rice pudding was definitely a winner and will be on my to do list this week.
I have also had a lot of positive feedback from my 2 month progress pics and I want to say thank you to everyone for their kind words and support!! I have noticed in the last week or so I have lost a lot of my strength, but this would come down to not going to bootcamp 4 days a week and not doing weights at home. I think because the weight has come off so easily with barely any exercise I have neglected keeping myself toned. Trust me I am not the type of person that is going to be all beefcake where my shoulders join up into my neck and I walk around like I have a bulls head stuck up my ass keeping me flexing at all times. I don't care for that look at all, but I don't want the weight I have lost to make me go all saggy! For the next 9 weeks I am going to have no family to help look after the kids or to give me a break to exercise kid free, so I am going to do up my own little movement program. I will post it on here incase anyone is interested and hopefully keep me more motivated. I will be interested to see how my energy levels go with an increase in exercise on this sugar free diet. I might have to get the husband on his days off to let me beat the shit out of him, purely in the interest of a cardio boxing session....
