So what was I craving today.. NUTELLA or hazelnut chocolate or cookies and cream chocolate or cheesecake. Lets get crazy and just make a nutella cheesecake with cookies and cream icecream on the side with hazelnut chocolate gnache....
Sh%t was getting serious, so serious that I found myself watching a clip on youtube about a no bake nutella cheesecake.
I really really wanted something sweet today. I tried drinking water, didn't work, I tried substituting it with a nibble of the sweetness of an LCM bar or hobnob cookie but nothing was working.
I thought about just stopping at Woolies and going and getting a big jar of nutella (and the ingredients for the no bake cheesecake....) but I stopped myself. I tried some macadamia nuts but that didn't really help either.
I'm not sure what bought about this sudden craving? Was it the rice malt sugar and orange in the pulled pork sauce that triggered something?? Who knows. But I'm proud to say I didn't give in. Although if I had a jar of nutella actually in the house , I'm not sure I would be saying the same thing.
As it was the 6 year old first day of school today I decided to skip the macadamia and coconut muffin and went for a cooked breakfast. I made the family crispy ham, goats cheese, kale and poached egg on a bed of sourdough bread. They loved it!! My husband was like is this what you have for breakfast everyday?? Umm i could I guess?
When the 6 year old came home from school I offered him a warm coconut and macadamia nut muffin. He took one bite and told me politely that he would prefer something else for his afternoon tea, as this muffin tasted very weird. I had a bite and although it was better than the pumpkin and coconut muffin from last week, it still wasn't a "winner" thats for sure. He did however try a hob nob biscuit and gave it big thumbs up. He said "now this is the good cooking you do mum, don't cook those other little cakes again"... I was also informed that the LCM bar I made and packed in his lunch was way better than the ones from the shops! He requested this for his lunch for the next week and also could he get one for his afternoon tea. The one year old has turned her nose up at most of the foods offered to her today. She did however enjoy some peanut butter on sour dough bread, some sliced up kiwi fruit and some grain wave chips.
I also had my weekly Pt this morning and found that my energy levels are back to normal. I have a late game of oztag tonight so it will be interesting to see how I go with that.
What did I eat today?
Crispy Ham, goats cheese, kale and poached egg on sour dough bread
I had to use up the pulled pork, so I decided to do a rye wrap with pulled pork, goats cheese, tomato, spinach and toasted it. The husband approved. I think he wants to marry the pulled pork....
Monday nights are our early dinner nights as I play oztag. So pork sausage rolls with salad. I thought the 6 year old would be excited at the thought of having sausage rolls for dinner but he wasn't sure how he felt about having "lunch" for dinner. It was all going good, I was folding them like a pro and had them popped in the oven ready for an early dinner, but every time I kept checking on them, they didn't look any "puffier". I thought maybe I was just being impatient. So I waited another 10 min and checked again. They had expanded, were leaking a bit of liquid (assuming from the zuchinni, that I may not have squeezed as per directions) but not puffy. It was then I realised that maybe I didn't have puff pastry, maybe when I spent 10min reading the sugar content of every brand of pastry in the freezer at the shops and getting a mild case of frost bite, I picked the one with the lowest sugar content only to find it was shortcrust pastry. Oh sh*t!!
All good right? Yep better than good, it tasted amazing! BUT to taste them I had to spend 15min trying to unstick the bloody baking paper from the bottom of them... Seriously I hate cooking!!
I really missed the 6 year old, everyone needs a 6 year old to make themselves feel good
I really really want some nutella, just a lick of the spoon and i'll be happy
Felt hungry for most of today
When they say squeeze the moisture out of the zucchini, they mean it
I need to stop being a lazy turd and actually make the sauces I bought the ingredients for last week
Baking paper that is supposed to stop it from sticking to the pan can go eat a giant turd..
When craving nutella, prolly not the best idea to google youtube food clips on it...
